 Equipment Introduction

The vacuum cryogenic expansion technology, namely pressure differential expansion, also called air expansion and explosion spray drying (Explosion puffing drying), is mainly used in the production of puffed fruit and vegetable crisp chips. The products contain no oil and any additives, which avoid the difficult problem of high oil content and short storage period for vacuum fried fruit and vegetable chips, and the vacuum cryogenic products are rich in protein, amino acids, cellulose, vitamins, minerals and other nutrients are natural foods.The vacuum expansion unit consists of expansion tank device, vacuum pump, air compressor, large caliber valve, and electric control cabinet, digital display temperature instrument, pipeline and control system and other parts.

Basic Work Principle

The vacuum low temperature puffing system is mainly composed of a pressure tank and a vacuum tank which is 5-10 times larger than the pressure tank. After pretreatment, the fruit and vegetable raw materials were dried to moisture content of 15%-25% (the water content of different fruits and vegetables is different). Then, fruits and vegetables are placed in a pressure tank. By heating and pressing, the evaporation and flashing of water in fruits and vegetables suddenly to achieve the purpose of expansion of fruit and vegetable cells.

1. Rich nutrient: Vacuum puffing preserves most nutrient of fruits and vegetables because of low processing temperature.

2.Compared with ordinary hot air drying, vacuum expansion at low temperature can produce a uniform and significant honeycomb structure, which is convenient for human digestion and absorption.

3. Rapid rehydration: as the vacuum low temperature puffed food is honeycomb structure, during rehydration, it absorbs more water in unit time and restores water rapidly.

4. Long storage period: Vacuum puffed products are free from oil, thus avoiding oxidation of oils and fats. At the same time, the product has a moisture content of 3%, so the shelf life of products is longer.
