Kluski is a generic Polish name for soft and mushy dumplings without fillings, similar to the term “gnocchi” in Italian; and kopytka, literally means “little hooves”. Kluski kopytka is a type of Polish dumpling made with mashed potatoes, flour and eggs, and made into shapes of small animal hooves. Kluski kopytka is often boiled in salt water and then served with fried bacon and onion, or in Lithuania kitchens, kluski kopytka is mostly baked first then stewed or boiled.

Another similar dish is called “kluski leniwe”, leniwe means “lazy” in Polish, it’s a easy-to-make kluski, often made with “twaróg” (fresh cheeses from the region), mashed potatoes, flour and eggs, then the dough is cut into diamond shaped dumplings. Kluski leniwe usually are served as savory dishes, however, there are also sweet varieties which children adore.

  The broad range of dough composition allow for different dough textures. Water content in dough varies form 30% to 50%, and could be cold, warm or hot to make wrappers tender after boiling or steaming. Shortening content in dough can be up to 20% to make wrappers that will be crispy after baking or frying.
