Classic Micarta Handle High Quality Fillet Knife

Designed with advice from actual fishermen, this beautifully-fashioned knife fillets, debones, and skins both larger and smaller fish from the day’s catch. The blade curves into a pointed tip, ideal for slitting a fish along the backbone and separating the fillet from the bones. Its unsurpassed flexibility enables chefs to make one long, clean stroke rather than "saw" through a fillet in a jagged cut.

What's Micarta?

Micarta 
a laminated plastic material based on paper and synthetic resins. Phenol-formaldehyde resins are most frequently used as the binder; melamine-formaldehyde and epoxy-phenol-anilinoformaldehyde resins are used less frequently. The resin content of Micarta is 40-55 percent. It is sometimes wrapped with red copper electrolytic foil, coated with cotton, glass, or asbestos fabrics, or reinforced with a metal screen. Several brands of Micarta are produced for various uses.
