Modify starch performance in frozen Tang-yuan:
1.Pre-gelatinized property allow starch soluble in cold water,so factory can save blanching process ,and make glutinous rice ball have starch visosity.When stuffed,the glutinous ball does not crack.
2.Make Tang-yuan flour whiter. modify starch whiteness is over 90%,so modify starch in stead of brightener ,which is forbided using in food, used in Tang-yuan flour.
3.Strong anti-freeze property and effectively prevent large particles of ice crystals formed during frozen storage,so frozen Tang-yuan does not crack,shrink and have a fine appearance.
4.Lower pasting temperature and good film-forming can improve shape retention,bright appearanche,delicate,smooth and bite taste.and boiled soup is clean.
