Manual of industrial gas griddle:

1. Add a small amount of vegetable oil to the griddle pan after it has heated for two minutes. Adding oil is not necessary with non-stick griddle pans but it will help foods cook faster and release easier.

2. Lower the raw foods onto the griddle's surface slowly to avoid splattering the hot oil.

3. Increase the heat to high once the pan is completely loaded with raw food. Cover the pan with a grease screen to prevent a greasy mess.

4.  Flip the food with a wooden or other non-abrasive spatula and reduce the heat to medium high to complete the cooking.
